APRICOT FLUSH


It's apricot season and the branches of our tree in the garden are laden with what the Ancient Greeks called the 'golden eggs of the sun'.  They beckon to be picked and are at their best eaten immediately under the tree, to savour the summer warmth captured in their roseblushed skin, and the intense delicous sweetness of the fruit.
But not all can be eaten thus, and so we take baskets and hats to fill to the brim, to make into jars and jars of apricot jam.
Apricots are particularly adapted for even novice jam makers as they contain a medium amount of pectine making the whole process very straight forward, as they tend not to over or underset.

Ingredient
1kg Apricots - not too ripe

750 gm caster sugar

Method
Cut small apricots in half and large apricots into quarters and discard the stones. Mix the fruit and sugar together in a large container, cover with a clean tea towel and leave in a cool, dry place for 18 hours.


Place a few saucers in the freezer so that they're cold enough for testing later. Preheat the oven to 140°C/gas 1, then sterilise and warm 2 jam jars in the oven.

Put the mixture in a pan and bring to the boil on a high heat. Reduce to a medium heat and cook for about 15 minutes, stirring occasionally.

Test the jam when the juice has thickened and the bubbles are large – the setting point has been reached when a drop placed on a chilled saucer forms a skin that’s visible when lightly pushed.

Remove from the heat and ladle into dry, warm jars. Tighten the lids and turn each pot upside down until cool. Store in a cool place for up to 6 months.



APRICOT FACTS TO CONSIDER WAITING FOR JAM TO COOK:

Apricots are a species of Prunus, and are often thought to have orginated in Armenia where they were extensively cultivated in ancient times - in fact their scientific name 'Prunus Armeniaca' hints at this.

However, it is more probable that they originated in China where they were first cultivated over 4,000 years ago near the border with Russia.  I like to imagine groves of Apricot trees blossoming under the shadow of the Great Wall.

Italian Amaretto liqueur and Amaretti biscuits whose flavour is generally attributed to almonds are instead nearly always flavoured with the oil extract of apricot kernels.

Apricots contain the highest levels and widest variety of the antioxident, caretenoids, leading them to be used in medical research, and thought also to be effective against heart disease and some cancers, although for now their curing qualities have not yet been scientifically proved.

Even today in China the apricot is strongly associated with medicine and education and there is an overall common useage of apricot kernels in traditional Chinese medicinal practises.

The biggest production of apricots is found in Turkey, then Iran and, rather romantically, the Himalayas.  California also has a high production and it is thought that they were introduced by the intrepid Spanish, whilst their presence in Southern Europe can be attributed to Alexander the Great who, maybe munching on one as he entered the country and tossing the kernel casually to one side before officially presenting himself, brought them to Greece in 4th century BC.

Solzhenitsyn wrote 'Apricot Jam and Other Stories' on his return to Russia after the fall of the Soviet Union.

RISERVA MONGRIS 2007 MARCO FELLUGA


"Burroso" questo Pinot Grigio in purezza di Marco Felluga. Un bianco per le serate estive. Il colore conquista per il giallo intenso con sfumature tendenti al verde pallido. I profumi di mela, acacia, vaniglia e lieve tostatura si succedono mentre si degusta.  Allevato nei vigneti di Farra d'Isonzo questo Mongris riserva 2007 trascorre due anni sui lieviti. Dolcezza e mineralità lasciano un ottimo ricordo al palato. Per l'azienda governata da Roberto Felluga un Doc Collio eccellente.

THE PALACE IN THE CEREQUIO VINEYARD


















The slight terror I felt on the long, dusty descent down into the valley dissapated as I got my first glimpse of the Palas Cerequio. Nestled neatly in an old, unspoilt borgo, the Palas overlooks an ondulating, grape green sea of vineyards, stretching as far as the eye can see and occasionally puncutated by hazelnut groves and dwellings perched on the hillsides of Cerequio.


The Palas has recently been restored and transformed into a charming Relais with just nine rooms. Four of these are in the main old building, whilst another five have been added in a new building which comprise five duplexes all very white, with floor to ceiling white curtains and wonderful views of both the valley and the pool which is just below. Each room not only has its own bathroom but also an unexpected touch of the orient in the form of a turkish steam room. There are masses of grey towels, always a luxury, and in case you feel like cooking there is an electric hobb and sink hidden away behind a sliding door which doubles up for bathroom privacy in a game of now you see me now you don't.


Should you not feel like cooking - and we didn't - you can choose a number of simple dishes that are cooked on the spot and eaten outside overlooking the little garden and a tiny church built at the end of the 19th century.

The relais, which is well run by its director Roberto Stroppiana with the able help of his enthusiastic, kind English wife, Jane, belongs to the Italian wine maker Michele Chiarlo better well known throughout the world for his delicious Barolo.


On the weekend we went to stay, Michele's son, Stefano, was being filmed by Charlie Arturaola for Charlie's second film which is being produced by the Argentinian director Lino Puja who was also present. After an evening of much jollity we all had a more subdued breakfast in the shade of the terrace and talked about the unexpected success of Charlie's first film 'El Camino del Vino'.

E' l’ultimo nato in casa Pommery. Prende nome da una porzione di vigneto all’interno del domaine, nel cuore della città di Reims.  È composto in prevalenza da uve Chardonnay e Pinot Noir selezionate nel 2002 dallo chef de cave Thierry Gasco, a cui ha fatto seguito un affinamento in cantina di otto anni. Cinqueterre 2010 - Campogrande

"Progetto eroico del grande barolista Elio Altare in zona Cinqueterre, Liguria. Il luogo unico nel suo genere è tanto bello quanto estremo con pendenze sul limite della fisica che ne comprometto l'uso di macchinari agricoli costringendo al totale lavoro manuale. Questo vino che prende il nome dalla sua zona di provenienza è un uvaggio di Bosco e Albarola ovvero le due uve autoctone piu importanti. Il colore cristallino è lucente e limpido nonostante non vengano eseguite filtrazioni, il naso è un inseguirsi di erbe aromatiche, rosmarino, genziana, ginepro e macchia mediterranea. La bocca precisissima è fresca e minerale, avvolge bene le pareti senza appesantire, finale leggiadro e lungo con un timido tannino in chiusura. Tutto questo sotto la soglia dei 12 gradi di alcol. Bravo Elio!"

BRUNELLO, CONSORZIO A BINDOCCI


CHARLIE ARTURAOLA GIRA IL SECONDO FILM




Vino e cuore. Lo ripete sempre Charlie Arturaola, uno dei degustatori più noti del mondo e da qualche mese attore,nel film “El camino del vino”. Una pellicola che racconta la storia di un professionista del vino che perde il gusto, il suo palato si rifiuta di individuare e comprendere quando appena bevuto. Una storia che si svolge nelle vigne di Mendoza e dopo varie peripezie si chiude positivamente. Tradotto in nove lingue e mandato nel mondo, Italia esclusa, è stato un successo. Un film fatto da attori non professionisti, ma da protagonisti del mondo del vino, Michel Rolland compreso. Uruguaiano di origine spagnola, della regione basca, Charlie è un grande appassionato del vino italiano. Quando può non si nega una visita. “La Barbera ha conquistato il mio cuore, come il Nebbiolo, il Sangiovese”, racconta portandosi la mano al petto, mentre percorre i filari di Cerequio del produttore Michele Chiarlo. “Il Nebbiolo ha rapito la mia fantasia, mi trovo in un mare di vigne eccellenti. Ti volti a destra e scopri su questi crinali i proprietari e produttori di vini unici”. Ogni bottiglia una storia, un nome, un incontro, un bicchiere per raccontare l’ultima vendemmia. Charlie è misurato, curioso, indagatore nel suo percorso quotidiano verso le cantine del mondo. Celebre per il film, ma per la sua passione, ora sta meditando di ripetere l’exploit. Questa volta l’Italia del vino e dei wine lovers sarà protagonista. Partendo dall’America, dove Charlie è numero uno, verso il Mediterraneo, accarezzando Francia e Spagna. “Ma l’occhio sarà puntato sul vigneto italiano, partendo dalla Napa Valley”.



IL "PACCHERO" DI MASSIMO CAMIA



Ho rivisto lo chef Massimo Camia nella sua locanda tra le vigne a Barolo. I suoi piatti restano un punto di riferimento. Massimo è cuoco autodidatta, puntuale e ricercatore. Si parla molto di pasta e l'occhio arriva a Sud dimenticando il Nord italiano. Felicetti e Defilippis sono i due alfieri. Ho provato il "pacchero" del pastificio Defilippis trafilato al bronzo farcito di ricotta e burrata pugliese, pancetta rosolata, emulsione con cime di rapa. Massimo mi ha regalato la sua ricetta.



Ingredienti (per 4 persone)

18 paccheri grandi del pastificio Defilippis
500gr. ricotta di bufala
200 gr. burrata di bufala
100gr. pancetta tagliata a dadini rosolata
50 gr. grana padano grattugiato
10 gr. basilico tritato
5gr. sale fino
pepe nero macinato
noce moscata



Preparazione

Cuocere i paccheri in abbondante acqua salata per circa sette minuti, scolare e raffreddare in acqua, asciugare. Preparare una farcia con tutti gli ingredienti elencati, riempire i paccheri un po' pressati e abbatterli a -20. Bollire le cime di rapa, quando sono cotte scolarle, frullarle a freddo con poco olio extravergine e sale. Per la cottura i paccheri vanno immersi nella panna liquida, meglio farlo da surgelati. Disporli in una telia, separati, coprirli di grana grattugiato e cuocere in forno ad aria a 170 gradi, disporre sul piatto le cime di rapa con un biberon e adagiarvi sopra i paccheri.
