IL TASTE DI MATTEO AL PARCO




Curiosavo dietro le quinte di Taste, in allestimento al parco Sempione, e ho trovato Matteo Torretta, lo chef del Savini di Milano, seduto sotto una sua gigantografia, intento a meditare. Certo mi sono detto il peso del ruolo. E anche l’età, perché Matteo ha appena 29 anni e la responsabilità della griffe, per quanto riguarda la cucina, più importante della città. Il Savini era e resta, anche se l’avventura subisce i suoi insostituibili alti e bassi, un bell’approdo a tavola. Con Matteo molto calato nella parte, da due anni ormai, e impegnato a riportare le cose al suo posto. Di questo pensava a Taste, in questa soleggiata anteprima, di un evento che se fosse organizzato, a Londra o Parigi, avrebbe tutta un’altra storia. “A Londra non mancherebbe il glamour, qui la gente capisce a fatica la vera essenza di questi eventi. Manca la vera cultura, del cibo, in questo caso. C’è un apprezzamento a scoppio ritardato”. Uno slogan esplicito sotto il suo ritratto: “L’avanguardia senza la tradizione non può esistere”, naturalmente a tavola. Lo sa bene lo chef di scena ogni giorno al Savini. A Taste presenterà tre piatti, acquistabili, sino a domenica, dal pubblico, a quattro euro: brasato, polipo e un dolce al big bubble. Da provare. Con lui, negli stand del parco, ci saranno Andrea Berton, Carlo Cracco, Claudio Sadler, Viviana Varese, Aimo e Nadia Moroni, Filippo Gozzoli, insomma una selezione del meglio degli chef che lavorano a Milano. Una decina in tutto.

I was nosing around behind the scenes at the Taste of Milan festival which opened tonight at 18,30 when I saw Matteo Torretta, Head Chef at Savini, sitting meditating beneath a large photograph of himself. The weight of responsibility I said to myself, also because Matteo at 29 is the youngest participating chef in the festival and already responsible for one of the city's most important brands in food circles. Savini was, and remains, despite its ups and downs, a great place to be with Matteo at the helm. Having arrived two years ago he has undertaken the task of getting things back on track with gusto. Today I asked him his thoughts on Taste, to which he replied that had it taken place somewhere else like London or Paris it would have been another story. "London would have a different, more sophisticated audience who understand and appreciate food unlike here where people have a hard time understanding this type of event. Real food culture is missing here or at least is less developed than abroad." An explanatory slogan sits above his photograph, 'The avantguard does not exist without tradition', a philosophy he follows and develops each day at Savini. At Taste he will present three dishes which, until Sunday, can be bought by the public for euro. 4.00 each: braised beef with herbs, octopus, and a pudding called The Big Bubble. All of which should be tried and tested. Some of the most notable Italian chefs will be working alongside him in their various stands dotted around the park: Andrea Berton, Carlo Cracco, Claudio Sadler, Viviana Varese, Aimo e Nadia Moroni, Filippo Gozzoli to name a few, all of which makes a trip to the park rather more than a teddy bears picnic.
